Ingredients

1 Slice Wholewheat bread, crumbed
1/4 cup Nonfat Evaporated Milk
1/4 tsp dried Dill
1 tsp fresh Chives, snipped
1 small Egg, beaten
1 3/4 oz (50grams) Pink or Red Salmon, canned in water no skin or bones
1 tsp Lemon Juice
1/4 tsp Onion Powder
Directions
Heat oven to 400 deg F (200 deg C) and lightly spray with canola spray a 1 1/4 cup souffle dish.
In a bowl, combine the breadcrumbs, evaporated milk, dill, chives and onion powder and leave to stand for @ 2 minutes.
Add egg, salmon and lemon juice and mix well.
Spoon into the prepared dish and bake for @ 25 minutes or until golden and well puffed.
Serve immediately.

This recipe is the same as the one in a book called *Cooking for One,* except it substitutes nonfat evaporated milk for cream which, thankfully, knocks off 200 calories per serving! I've made the version from the cookbook and it's easy and delicious! Can't wait to try this lower-cal version, now! - 3/4/13
