Ingredients

    Gluten Free Rotini - 1 Box
    Spinach, fresh, 4 cups
    Chickpeas (garbanzo beans), 2 cans
    Juice from 2 Lemons
    Zest from 2 Lemons
    Olive oil, 2 tbsp
    Garlic, 2 cloves, minced
    Golden Raisins, 1.5 cups
    Red Pepper Flakes, 1.5 tbsp
    Salt
    Pepper

Directions

Cook pasta in large pot. Rinse chickpeas and set aside.

In a small bowl, whisk lemon juice, lemon zest, olive oil, garlic, and red pepper flakes until blended. Add salt and pepper to taste.

Combine pasta and spinach, allowing spinach to wilt. Add in chickpeas, dressing and raisins, mixing through. Can be served immediately or chilled and served later.
