Ingredients

1 onion, chopped
2 Tbsp. extra virgin olive oil
3 cloves garlic, chopped
2 Tbsp diced jalapenos (from a jar)
2 tsp cumin
1 large sweet potato, shredded
2 cans reduced sodium black beans, mashed
1 egg, lightly beaten
1 cup Panko bread crumbs
8 100% whole wheat hamburger buns
Tips
I use a food processor to chop onions, garlic, sweet potato & to mash my black beans.
Directions
Turn broiler to high.
Saute chopped onion in olive oil over medium heat until translucent.
Add chopped garlic, diced jalapenos, and cumin to the pan and saute for seconds longer.
Transfer onion mixture to large bowl and add in shredded sweet potato, mashed black beans, egg, & bread crumbs.
Mix all ingredients together and form 8 patties.
Place patties on lightly sprayed cookie sheet or broiler pan and broil for 10 minutes per side (less time if you do not like them well done).
Serve on 100% whole wheat hamburger buns.
