Introduction

My version of palak paneer but using tofu instead of paneer. Easier, less wasteful than making paneer, and the texture of tofu is very similar to paneer. One of my favorite dishes! Ingredients

    2 1/2 tablespoons ghee
    1/2 yellow onion, chopped
    1/2 tsp chopped garlic
    1 tbsp ginger paste
    2 tbsp garam masala
    1 tbsp turmeric
    1/2 tsp ground cloves
    4 lightly crushed cardamom pods
    2 bunches spinach, chopped somewhat finely
    1/2 tsp honey
    1/4 cup 1% milk
    2/3-1/2 package sprouted firm tofu


Tips

Add salt and pepper if you like just before serving. It won't need much.


Directions

Heat the ghee in the pan and add garlic, onion, ginger and all the spices. Sauté for about 3 minutes, then add chopped spinach, honey and milk. Sauté for another 5-7 minutes, to let the liquid reduce a bit. Add tofu cubes and heat through.

Serving Size: Makes 4 small almost 1-cup servings.
