Introduction

Number of Servings: 6

Ingredients

    1 Spaghetti Squash
    1.5 lbs Chicken Breast
    1 Cup Chopped Red Pepper
    1/2 Cup Chopped Red Onion
    2 Cups Low Sodium Chicken Broth
    1/4 Cip Reduced Fat Parmesan Cheese
    2 Tbsp Extra Virgin Olive Oil
    1 tsp Garlic
    1 tsp Rosemary
    1 tsp Basil
    1 tsp Oregano
    Salt & Pepper to Taste

Directions

Preheat Oven to 350.
Slice Spaghetti Squash in half, clean all seeds out from the inside and then place the two halves face down on baking sheet. Cook for 45 minutes.
Coat chicken breast with 1/2 the olive oil, all of the basil, rosemary and oregano.
Cook chicken in pan on stove until no longer pink. Set aside.
When Spaghetti Squash is finshed, scrape the insides out into a medium sauce pan.
In pan, add chicken broth, garlic, red peppers and onions. Bring to boil.
Cut chicken in small strips and add to saucepan.
Add the rest of the olive oil and the parmesan cheese. Bring to boil again and serve. Add salt and pepper to taste.

Makes about 6 servings, 1 cup each.

    Incredible!
    Very good! perfect spices, full of flavor. Just to reduce some fat (b/c I am never short of it) I am going to reduce the EVOO next time. GREAT RECIPE!! Even My Hubby will now eat spaghetti squash!! - 2/21/14

    Whoops, I didn't mean this "bad" rating; it was an accident. I would give it 3 or 4 stars. I put it in a casserole with some mozzarella cheese on top and baked it for a while. I ended up draining off the chicken broth since it made it quite runny. - 10/23/13

    I love Olive Garden's Chicken Scampi, too, so this recipe caught my eye. I have been looking for a way to try spaghetti squash, as I love pasta but want to stay away from the carbs. This recipe was really tasty. It all melds together so well, I never missed the pasta! My husband loved it too! - 1/22/12

    I might make this again. It was good, but not great. Very filling and healthy though, I like that! This was the first time I have ever cooked spaghetti squash, so I still have lots of experimenting to do. I think next time I may add some other veggies (mushrooms) and probably more garlic. - 4/9/08
