Ingredients

3/4 C brown basmati rice
1 med yellow onion chopped
1 T olive oil
1 clove of garlic, chopped
6 oz ground turkey
2 tsp italian seasoning
1 15 oz can of diced tomatoes
1 8 oz can of tomato sauce
1 cup water
2 bell peppers, remove tops, and remove seeds. Chop up top meaty bits.
Tips
I am assuming meal for two adults with left overs for a meal. It helps to microwave the bell peppers for 3.5 minutes before filling and baking them.
Directions
In saute pan, add olive oil, garlic, onion, turkey and italian seasonings. Saute until turkey is cooked, as well as onions. Add the tomato products and water. Simmer 20 minutes.
Spray a 8 x 10 dish, and add a third of the rice mixture. Place bell peppers into the rice mixture. Add remaining rice to the fill the bell peppers. Extra can be placed around the bells.
Cover with aluminum foil to keep rice from drying out. Bake at 350 for 1/2 hour.
