Ingredients

2.5 lb cross rib roast (aka chuck/shoulder)
2 Tbsp vegetable oil
1 large onion, cut into wedges
1 large garlic clove, minced
1/4 c red wine (I used cooking wine)
1 can mushroom soup, undiluted
1c quartered fresh mushrooms
Salt & pepper

Directions
Heat oil in a heavy pot; season and brown roast on all sides. Remove and add onions and garlic. Cook till light golden.
Stir in wine then soup, scraping up the browned bitstransfer roast and sauce to crock pot. Add mushrooms and cook on low for about 6 hours.
