Introduction

Ingredients

    1 head kale, stems removed & leaves ripped
    1 cup barley, cooked and cooled
    1/4 red onion, sliced thin
    2-3 tomatoes, diced
    1/2 large cucumber, diced
    Handful fresh cilantro
    1/4 cup olive oil
    1/4 cup red wine vinegar
    1/4 cup apple cider vinegar
    Salt & pepper to taste

Tips

The kale is tough, so be prepared for that until about day 4-5 when it soaks up the dressing.


Directions

Mix all your vegetables and barley together, whisk olive oil and vinegar and pour over. Serve immediately, or refrigerate for up to one week.
