Ingredients

    1 cup oats
    Using a food processor, GRATE
    1 small zucchini
    SLICE
    1 onion

    Pulse
    1 cup spinach
    1 cup mushrooms

    1 egg
    2 egg whites

    1/4 c. pepitas or sunflower seeds
    Seasonings like pepper, garlic powder,
    Dukkar (seasonings usually added to bread dipping oil.

Tips

I like this plain, eaten with a salad or soup. I like cinnamon yogurt spread over a piece and grated apple and currants on top.

I also like the sauce from Blue Brussels Sprouts spread on top then a collection of raw veggies. This becomes like a deep dish pizze without the melted cheese to hold everything on top.

My best hint is to mix the sauce and a collection of veggies like chopped tomatoes, black olives, red pepper, onion, artichoke hearts. Then spread the blended salad on top of the pizza crust, or eat it With the pizza crust crackers.

The possibilities are endless for the sauces and topping combos. As are the possibilities for the things added into the crust.

Whatever you do, be sure you are adding high density nutritional choices to the crust.

For a party, cut the crust into smaller pieces. Form small circles, slice diamonds, and then top with your favorite healthy toppings just before serving.

The pizza crust slices freeze well. Reheat the crust to crunchy from frozen on the cookie sheet.


Directions

Using a food processor, grate 1 small zucchini.
Slice 1 onion.
Pulse 1 c. spinach and 1 c. mushrooms.

Mix in a bowl with 1 egg and 2 egg whites. Add seasonings like Dukkar or bread dipping spices.
Mix in 1 c. dry old fashioned rolled oats.

Put a sheet of parchment paper on a pizza pan or cookie sheet. Spray with cooking spray if desired.
Pat out the mixture like a pizza crust or large cookie.
Sprinkle the top evenly with pepitas. Other nuts may be used like walnuts, almonds, cashews, or macadamias.

Bake 30 minutes at 375 degrees F until golden and crispy.

Slice into 8 slices. 2 slices or 1/4 recipe is a serving.
