Ingredients

    Salt/pepper
    3lbs ground beef
    2 med. onions, diced
    3 jalapeños, diced
    2 tbsp olive oil
    2 cloves garlic, minced
    4 chipotles in adobo, diced
    2 tbsp chili powder
    1 tsp cumin
    1 tsp paprika
    1 14.5oz can whole peeled tomatoes
    2 cups water
    1 can black beans, rinsed

Tips

If you want put finished chili in crockpot and cook on low instead of simmering on stovetop.


Directions

Season beef with salt and pepper. Sautéed onions and jalapeños in olive oil until soft. Add beef and cook until brown. Add garlic and cook until fragrant. Add chipotles and spices. Add tomatoes and water. Bring to boil, reduce to a simmer for 3 hours. add beans and serve.

Serving Size: Makes 18 half cup servings
