Introduction

Number of Servings: 8

Ingredients

    1 lb ground beef
    1 med yellow onion chopped
    3 cloves garlic
    2 lg carrots, chopped
    10 oz frozen peas
    8 oz mushrooms diced
    2 tsp coconut aminos
    1 can full fat coconut milk
    1 cup organic chicken broth
    1 tbsp arrowroot starch
    1 tbsp coconut oil
    3/4 package of GF tater tots

Directions

Sautee ground beef with chopped onions, garlic and carrots. Drain off fat and set meat aside. Clean pan, melt coconut oil, add chopped mushrooms, coconut aminos, and salt and pepper. Saute for about 10 minutes, until all the liquid cooks off. Meanwhile, mix broth, coconut milk and whisk in the arrowroot. Stir that into the cooked mushrooms, bring to a boil and simmer until thickened. Pour meat mixture, peas, and "gravy" into a large casserole, top with tots. Bake at 400 for about 45 minutes. You can cover with foil if you don't like your tots super crispy.
