Ingredients

    Egg Beaters, 1.5 cup
    Skim milk, .5 cup
    Shredded Cheese, .5 cup
    Parmesan Cheese, shredded, 1 tbsp
    Butterball Turkey Bacon 4 slices
    Zucchini, 1 cup, diced
    White Onions, diced
    Spinach, fresh,chopped .25 cup
    Kale, .25 cup, chopped
    Mushrooms, fresh, pieces or slices, 1 cup
    Boar's Head Cream Havarti Dill Cheese, .07 oz

Tips

You can individually freeze these and then put them in a freezer bag for use later.


Directions

Spray a pan with non-stick cooking spray, add zucchini, onion, mushrooms to the pan on medium low heat and cook them 2 to 3 minutes. Set aside.
Preheat oven to 350 degrees. Spray 12 count muffin tin with non-stick cooking spray.

Add all ingredients to the muffin pan first. Then in a separate container mix the egg beaters and the milk. You might want to add salt and pepper to taste. Pour in egg mixture into the muffin tins until they are 2/3 full. Bake in the oven for 25-30 minutes
