Delicious fall oat bars, full of good-for-you pumpkin and oats (and bad-for-you butter and sugar). Like something you'd get at a coffee shop! Ingredients

Crust
3 cup whole wheat flour
2.5 cup quick oats
1.5 unpacked brown sugar
1 tsp salt
1 tsp baking powder
1 tsp baking soda
2 tsp cinnamon
2 sticks unsalted butter, cut into small cubes
1 cup walnuts, chopped
1 cup walnuts, chopped
Filling
0.5 cup brown sugar, packed
1 large can of pumpkin (29 oz)
2 tbs melted butter
Salt (to taste)
2 tbs flour
Tips
Easy to make this vegan: just use margarine instead of butter.
Directions
Preheat oven to 375.
Put all ingredients except the walnuts in a large bowl, mix with your fingertips or a pastry cutter until well combined (mixture will be crumbly)
Press half the crust mixture into a pan lined with parchment paper. Bake 12 to 15 minutes.
Mix filling; spread evenly over the bottom crust.
Mix walnuts into the remaining crust. Sprinkle evenly over the top of the pumpkin, pressing down gently when finished.
Bake for another 30-40 minutes.
Allow to cool completely before cutting.
Serving Size: Makes 24 - 2" pieces
