Ingredients

    62g plain white flour
    1 egg
    71ml (2.5oz) milk
    6 tbsp olive oil

Tips

NB: Nutritional information accounts for 3tbsp even though 6tbsp are required because at least half the oil is left in the pan and not consumed.


Directions

Pre-heat the oven to 220C.

Put 1 tbsp olive oil in each of 6 muffin cavities. Pre-heat for 10 minutes.

Whisk the remaining ingredients together. Add salt if you like (not included in nutritional info).

Put 1/6th of the batter in each muffin cavity, working quickly.

Cook for 12 minutes.
