Introduction

I freeze these and mashed sweetpotatos and then add a tossed green salad. Makes a fast weekday meal with good portion control. If you use just egg white you can lose 5 g of fat. But I find it moister with the whole egg. Too freeze sweetpotato make mashed and add some lemon juice to retain light color and then freeze in 1/2 cup servings. Ingredients

    1 lb ground sirloin 10% fat
    1 cup finely chopped onion
    1 cup dry oatmeal
    1 egg
    2 tsp black pepper
    2 tsp garlic

    Topping

    1 cup catsup
    4TBS yellow mustard
    brown sugar sweet & Low (enough to sweeten and make sauce tangy)

Directions


Pre- heat oven to 350

beat egg in large bowl. add oatmeal, onions, pepper and garlic. Stir. Add ground sirloin and mix with hands. Fill muffin cups 3/4 full.

Topping:

in small bowl mix catsup mustard and brown sugar sweet&Low to desired taste. (tangy)

spread muffin meatloafs with sauce and then bake for 30 -35 min.

    This was a great tasting meatloaf. For my family, there was too much pepper. If I made it again, I would substitute more garlic for less pepper. - 7/3/08

    How is this sugar free? I have yet to find sugar-free or unsweetened ketchup...
    Any brand to recommend? thx

    There are several sugar free ketchups on the market. Check out Hunts low sugar on Amazon.com or look up a sugar free recipe by googling sugar free ketchup recipes. I just use regular ketchup as the amount is so small it really doesn't raise my BS much. Morningstar also puts out sugar free ketchup

    I don't like pepper so didn't add any. I did add mushrooms and I only used half a onion. I also used honey mustard. It was wonderful - 2/13/12

    Used extra lean ground beef and added more garlic (one of my favorite flavors). This was a bit too much onion for me, and on the verge of being too peppery. I WILL be making this on an almost weekly basis, it was GREAT! - 1/30/11
