Ingredients

    2 cups of cooked quinoa
    1 red bell pepper, diced
    1/4 cup of red onion, diced
    1 can of low-sodium black beans, drained
    1 bag of steam in bag corn kernels
    3 small limes, juiced
    1/4 of olive oil
    1/8 tsp of cumin
    1/8 tsp of chili powder
    salt to taste

Directions

Cook quinoa and toss with veggies. Dress with dressing made from seasoning, oil, and lime juice. Salt to taste

Serve warm or cold
