Introduction

Less than 300 calories a portion. I use short grain brown rice, but I'm sure other types of brown rice would work perfectly well. Less than 300 calories a portion. I use short grain brown rice, but I'm sure other types of brown rice would work perfectly well.

Ingredients

    1 cup uncooked brown rice
    2 cups broccoli
    6 medium sized mushrooms, sliced
    2 oz grated smoked gouda
1 package Progresso Three Cheese Recipe Starter

Tips

If you find that all the water has boiled away and your rice is still under cooked, add a small amount (1/4 cup or there abouts) of hot water and continue cooking for 5-10 minutes.

Directions

Bring 2 1/2 cups of water in a medium sauce pan to a boil over high heat with powder seasonings of your choice. (I use 1 cube of beef bouillon)

Add rice to water and lower temperature to medium to medium-low depending on your burner. You want a gentle boil. Put a lid on your sauce pan.

Depending on how rapidly it boils, the rice should take 45-55 minutes to fully cook. Water will be completely soaked up by the rice.

While the rice is cooking, cut up the broccoli and mushrooms to your desired size and grate the cheese.

During the last 5-10 minutes of the rice cook time, add the chopped broccoli to the pan without mixing it in. Re-cover.

When the rice is fully cooked, uncover and mix in the recipe starter sauce and the mushrooms. Cook over medium heat, stirring regularly, until the mushrooms are cooked.

Slowly stir in the grated cheese until it is fully melted and season to taste. (I use granulated garlic and onion powder.)
