Ingredients

    1-4 oz (pre-cooked) 93% lean ground beef
    1/4 cup stir fry veggies (broccoli, bell peppers, carrots, onions, etc)
    1/4 tsp Emeril's seasoning
    1 bag Skinny Pop Popcorn (great substitute for chips & this brand is very low carb)
    1 oz pitted Kalamata olives

Tips

This is just a simple, relatively low-carb meal I came up with to rid my fridge of some left-overs.


Directions

Mix lean ground beef with 1/4 tsp Emeril's seasoning. Shape beef into a patty and fry in Teflon skillet using cooking spray. (If using 1T of extra virgin olive oil to fry, add 120 calories, 14g of fat to recipe nutrition total.)
Slice your veggies and have ready to stir fry (using wok). I like to make these ahead and re-heat.
Serve patty with stir fry veggies, olives and popcorn.
Or, you can omit the popcorn (and subtract 100 calories, 6.0g of fat, 30.0mg of sodium, 9g of carbs, and 2g of protein from your nutrition total).
