Ingredients

    1/2 small onion chopped
    1/8 cup green bell pepper
    1/8 cup red bell pepper
    1/2 cup ground turkey or beef
    Dash of Salt and Pepper
    1/4 cup of salsa
    2 Eggs

Tips

We sometimes use ground chicken as well
Sometimes we combine ground beef and ground chicken together.
You can also fry the egg and lay it on top of the meat mixture. So many variations
And we mostly have this for supper.


Directions

1. In a frying pan saute the onion and peppers.
2. Add the ground turkey or beef with a sprinkle of salt and pepper.
3. Add the salsa when the ground turkey or beef is fully cooked. (No longer Pink)
4.Whisk eggs
5. In a separate skillet cook the egg like an omelet.
6. After flipping egg put meat mixture inside egg.
7. Put egg and mixture on plate and enjoy.

Serving Size: makes 1 1/2 cup serving
