Introduction

Squash Soup Squash Soup
Number of Servings: 8

Ingredients

    Whole Butternut Squash (Steamed or Baked-poke holes in the squash and bake for 25 minutes at 375 degree, then de-seed)
    1/2 cup Cashews (soak in water for 30 minutes if not using a high powered blender)
    1 T Grapeseed Oil (use to cook onion & chile
    1/2 Onion (white or yellow chopped)
    1 dried Chipotle Chile (chopped after soaking)
    3T Nutritional Yeast
    4 cups boiling Water (soak your chipotle chile in your water to hydrate)


Tips

Soak your cashews in water for 30 minutes if not using a high powered blender.


Directions

Steam squash or bake it by poking holes in the squash and placing on baking dish for 25 minutes at 375 degree, then de-seed. Saute the onion and pepper in oil.
Place all ingredients in a blender - enjoy!
