Introduction

Ingredients

8 oz whole wheat pasta (dry)
3/4 - 1lb chicken or turkey Italian sausage
3 cups of chopped leafy greens
1 can (14-1/2 oz.) Italian-style diced tomatoes, sodium free, undrained
olive oil or cooking spray (optional)
Tips
Spinach will cook down very quickly and should be added at the last minute. Other greens will have a longer cooking time.
If you use pork sausage, be sure to drain the excess grease before adding tomatoes and greens to the pan.
Directions
COOK pasta in large saucepan as directed on package, omitting salt.
MEANWHILE, cook sausage in deep large skillet on medium-high heat 10 to 12 min. or until done, stirring occasionally. Add spinach and tomatoes; cook 2 min. or until spinach is wilted, stirring occasionally.
**For Kale or chard, add to sausage halfway through cooking, and continue to toss kale and sausage in medium high heat for 10 minutes. Or, in separate pan, add olive oil and cook down kale or chard while the sausage is cooking (10-12 minutes)
DRAIN pasta; return to pan. Add sausage, mix lightly
