Ingredients

    Okras (Bhindi/Ladies Finger) - 1 kg
    Olive oil - 1 tbsp
    Salt - 2 tsp or to taste
    Chilli powder - 2 tsp or to taste
    Turmeric Powder - 1/2 tsp
    Cumin seeds - 1 tsp
    Mustard Seeds - 1 tsp
    Amchur Powder - 1 tsp


Directions

Heat oil in a deep cooking pan and put in the mustard seeds. Once it stops sputtering, add the cumin seeds, turmeric powder and the chilli powder. Saute for a minute and then add the okras. Turn once and then add the salt. After a minute add the amchur powder (which you can get in any Indian store) and turn once and cover and cook till done.

Note: Do not turn over and over as this will make the okras very sticky. Amchur powder is used to counter this stickiness. Anything tart can be used instead.
