Ingredients

    1 tablespoon butter
    1 tablespoon EVOO
    1 pound lean sirloin pork chops, cut into large cubes
    1 medium onion, chopped
    3 tablespoons all-purpose flour
    1 tablespoon paprika
    1 teaspoon salt
    ˝ teaspoon ground black pepper
    4 cups vegetable broth
    4 sprigs fresh parsley, chopped
    2 tablespoons chopped celery leaves
    1 bay leaf
    ˝ teaspoon dried marjoram
    3 unpeeled, diced potatoes
    2 carrots, sliced
    2 stalks celery, chopped
    1 (6 ounce) can tomato paste
    1 (15.25 ounce) can whole kernel corn, drained

Directions

1. Melt butter and oil in a large skillet over medium heat until the foam disappears from the butter, and stir in the pork cubes and onion. Cook and stir until the pork and onion are browned, about 10 minutes. While pork is cooking, mix together flour, paprika, salt, and pepper in a bowl. Sprinkle the flour mixture over the browned meat, and stir to coat.
2. In a crock pot, pour in the broth and stir in the parsley, celery leaves, bay leaf, and marjoram. Stir in pork mixture.
3. Stir in the potatoes, carrots, celery, tomato paste and corn; cover, and cook at least 3 hours
4. Remove bay leaf and serve hot.

Serving Size: Make 8 healthy servings
