Ingredients

    Dough

    1 1/4 lbs self-rising flour
    2 1/2 oz vegetable oil
    2 1/2 oz warm milk
    1/2 T baking powder
    5 oz warm water
    1/3 t salt


    Spinach Filling

    20 oz chopped spinach
    3 oz lemon juice
    1 1/2 oz canola oil
    1 1/2 T dry parsley
    1/2 lg onion, finely chopped
    salt & pepper to taste

Directions

Spinach Filling Instructions:
Drain and then squeeze all juice from spinach until almost dry. Mix all remaining ingredients thoroughly and set aside.


Dough Instructions:
Mix dough ingredients together and let it "rest " for awhile (about 45 minutes). Turn dough on to a very lightly floured surface. Roll out dough and cut it into about a 3" diameter circles.


Assembly of pies:
Place about a tablespoon of the spinach mixture into the center of a dough circle. Fold the sides up to form a triangle and pinch the sides together. Repeat until all pies are assembled.

Place on a greased cookie sheets or greased baking trays. Use no-stick spray to grease pans, if possible. Bake for about 20 minutes at 350 degrees until the bottoms and tops of the pies are slightly brown. This recipe makes about 18 pies

    These is my favorite pies I'm from Penna. and the Lebanese festival is where we get to eat the best pies ever - 6/7/10
