Introduction

Ingredients

    1/4 cup unsweetened applesauce
    1 tsp salt
    1/2 tsp black pepper
    1/4 tsp cayenne pepper for Spicy Sausage (can omit)
    1/4 tsp crushed red pepper flakes
    1/4 tsp rubbed sage
    1/4 tsp ground coriander
    1/8 to 1/4 tsp garlic powder
    1/8 to 1/4 tsp onion powder
    1 pound 93% lean Ground Turkey Breast
    1 to 2 TBL of olive oil


    .5 tsp Fennel seed

Tips

I usually double this recipe and freeze the cooked sausage patties or crumbles. Freeze the patties individually on a baking sheet and bag. If you double it and have to fry two or more batches, I don't wash the skillet in between, I remove the first batch after the browning and add a little fresh oil and cook the second batch or the crumbles.


Directions

In a bowl mix applesauce and all the spices together well so that it incorporates easily with the turkey. Add the turkey and mix well but don't over do it. You don't want to make the sausage too tough. I usually use my hands.
Now you can either make sausage crumbles by cooking in a large skillet over med high heat with approx 1 tbls of olive oil or you can form into patties and fry them. But here's the trick to get them good and browned. Once one side is browned, flip them over and let them cook for a couple minutes then add 1/4 of water to the pan and scrape the good brown bits up. Continue to cook and flip and scrape and coat the patties with the brown juices until the skillet is dry. If not brown enough add a little more water and continue. They will come out looking just like Jimmy Deans! Be careful as they are more fragile! Use the same method for the crumbles for brown sausage.

Serving Size: makes 1 pound crumbles or approx 8 patties
