Number of Servings: 10

Ingredients

    6-8 potatoes cut into 1/2 inch
    6 carrots, chopped
    2 red bell peppers, chopped
    1 onion, chopped
    3 cups frozen corn
    3 tsp thyme
    3 tsp cumin
    2 tsp pepper
    2 tsp salt
    2 bay leaves
    12 cups vegetable broth

Tips

This recipe has a little kick to it! Reduce the bell pepper for a little less spice.


Directions

Put all vegetables and spices into a dutch oven to cook for 15 minutes. Add vegetable broth and bring to boil. Cook for 1 hour stirring occasionally. Remove soup from heat and put 3/4 in a blender to bring it to a creamy texture. Add back to pot and simmer for another 15 minutes. Enjoy!
