Ingredients

    1 2/3 Cup Whole Oats
    1/3 Cup Olive Oil
    1/3 Cup Honey
    2/3 Cup nut pieces [I use a combination crushed almonds and walnuts]
    1/4 Craisins [Dried Cranberries]
    1 Tablespoon Cinnamon [optional]
    1 teaspoon Vanilla [optional]

Tips

I buy the large bags of nuts at Costco. I then use an electric chopper to chop about 2 cups of nuts and put them in an airtight container to use as I need them. Since I go through a recipe every couple weeks of this granola, it keeps me from having to chop the nuts every time, which is the only time consuming part of the recipe.


Directions

Combine all ingredients in medium size bowl. Once thoroughly mixed spread on cookie sheet lined with parchment. Cook in a 250 degree oven for 1 hour. Do not overbake!

Granola will come out of oven soft but will harden up as it cools. Break it apart and put in airtight container.

Serving Size: Approx. 8 half-cup servings
