Number of Servings: 4


    2 lbs skinless, boneless chicken breast halves, cut into bite size pieces
    1 Tb salt
    1 Tb fresh ground black pepper
    1 Tb paprika
    4 Tb butter
    8 oz fresh mushrooms, sliced
    2 Tb all-purpose flour (not whole wheat)
    1 cup chicken stock
    3 Tb sherry
    1 tsp dried rosemary
    1 pkg frozen artichoke hearts, thawed


Preheat oven to 375 degrees
Sprinkle chicken with salt, pepper & paprika to taste
Melt butter or margarine in heavy skillet & brown chicken on all sides
Remove to foil-covered 9 x13 inch casserole
Add mushrooms to pan drippings & saute
Add flour & gradually add stock or broth & sherry. Season with rosemary; deglaze skillet
Arrange artichoke hearts among the chicken pieces & pour sauce over all. Re-cover with the foil & bake for 40 minutes or until tender

  • This was excellent. Substituted EVOO for butter and Chardonnay for Sherry, used canned artichokes too. The dinner was awesome and my husband loved it. I guess it's that kind of recipe that you can improvise as needed. It's a hit with us!!! Thanks for the recipe. - 10/19/08
