Ingredients

    500 gm Mutton leg, shoulder, or ribs
    1 inch Ginger root
    4 cloves Garlic
    2 tsp Fennel seed
    2 tsp Cumin seed
    1 tsp Turmeric
    1 pc Star Anise

    I red onion, cut into 1/8s
    1 stick Cinnamon
    5 pods Cardamom
    Salt
    Black Pepper
    1 tsp Chicken Powder

Tips

Mutton can be goat or lamb.


Directions

Grind the spices, make into a paste with the ginger and garlic, lightly roast the paste in a small amount of oil. Cube the mutton, and season it w/ salt and black pepper. Toss mutton cubes with spice paste and marinade for 1 hour. Cover with water and bring to a boil with the onion, cinnamon, cardamon. Simmer for at least two hours, until mutton is tender. Garnish with fried shallots and celery leaves.

Serving Size: Makes 5 100 ml servings
