Ingredients

    4 tbsp. sugar
    6tbsp soy sauce
    3 tbsp. fresh lime juice
    1/4 tsp cayenne pepper
    8 tsp minced garlic
    3 tbsp. peanut oil, divided
    12 oz. sirloin steak, sliced thinly across the grain
    1 lb. fresh green beans, cut into 2" pieces
    2 red bell peppers. cut into thin strips
    2 tsp cornstarch

Tips

if you like your green beans a little doner, blanch in boiling water for approx. three minutes before stir-frying. plunging into a cold water bath will halt the cooking process.

serve over brown rice. (not included in nutritional analysis)


Directions

combine first five ingredients. whisk in 2 tbsp. peanut oil. transfer to large bag or bowl. add sliced sirloin and let stand at room temp for 15 minutes.

heat remaining tbsp. peanut oil in wok over medium high heat. transfer beef to wok using slotted spoon. reserve marinade.

cook beef 1.5 to 2 minutes. just until browned. remove steak. add beans and bell peppers to wok. cook 3-5 miuntes depending on your preferred doneness.

whisk cornstarch into reserved marinade. stir mixture into veggies and set simmer until it starts to thicken, about a minute.

add steak. let simmer another minute and then remove from heat.
