Introduction

A smoked chuck roast is very easy to do and will delight the family. A smoked chuck roast is very easy to do and will delight the family.
Number of Servings: 12

Ingredients

    1 2-3lb chuck roast, well marbled
    3 Tablespoons coarse salt
    3 Tablespoons coarse ground pepper
    1 cup Olive Oil.

Tips

Check grill temperature every 40 minutes. Try to keep at 275-300. Add hickory chips/chunks at the beginning and during smoking for an awesome flavor. This may be finished in 4 hours or it may be finished in 10 hours. Each roast is different but in the end the reward is worth it!


Directions

Coat both sides of the roast with olive oil.
Rub coarse salt into both sides of roast.
Rub the coarse pepper into both sides. Don't skimp on either!
Let set for at least 30 minutes or refrigerate overnight.
Let roast come to room temperature.
Light smoker or set up grill for indirect grilling and preheat to 275F.
Place roast on cooking surface. Cook until temperature reaches 165F.
Remove roast and wrap in 2 layers of heavy foil. Add apple juice and seal.
Place back on grill. Cook until the roast is at 205-210F.
Remove from heat and place in a cooler filled with towels.
Let sit for 2 hours.
Place on a plate, unwrap, and pull meat with 2 forks. Be careful as the meat will be hot.
