Ingredients

2 Cups Cauliflower
4 tbsp Cottage Cheese
1 tbsp Almond (or any) Milk
2 ounces Extra Sharp Cheddar Cheese
1.5 cups cabbage or coleslaw mix
2/3 cup of peas
Topping:
2 tbsp hormel bacon bits (or ham)
1 extra ounce of cheese
Tips
The cauliflower puree makes an excellent mashed potato substitute - it doesn't take exactly the same, but it still tastes great! You can find the recipe at JyliaJenkin's Cauliflower "Mashed Potatoes"
Directions
Preheat oven to 350
Cut cauliflower into medium bite size pieces into a 2 quart glass pan with 2 tbsp of water.
Microwave on high 6 minutes - stir and microwave on high 6 additional minutes (Covered).
Puree cauliflower in a food processor or blender
Add 2 ounces cheese, cottage cheese and almond milk to the puree.
Microwave cabbage in the same dish for 3 minutes.
Add cauliflower puree and peas and stir.
Cook in oven at 350 for 20 minutes.
Top with a light sprinkle of cheese and bacon bits.
Serving Size: I make 4 - 2/3 cup servings
