Ingredients

    Ingredients are approximation.

    *Potato, raw, 3 medium (2-1/4" to 3-1/4" dia.) (remove)
    Chicken Broth or Bouillon, 4 cup (8 fl oz) (remove)
    Canned Tomatoes, 1 can (remove)
    *A Taste of Thai Red Curry Paste, 1 tsp (remove)
    (for the curry paste, I actually used a blend of my own spices & curry powder with 1 TB olive oil - this was just faster for calculation/averaging)

Directions

Heat spices & oil; if using onions, throw them in now and let cook in spice mix to soften. Then add chopped peeled potatoes. Coat in spice mix, then add tomatoes and broth (use vegetable and this is a great vegan recipe), reduce heat, and let cook until liquid is absorbed by potatoes (about 30ish minutes, normally).
