Number of Servings: 12

Ingredients

    2.5 cups Oat Bran
    Use 1/4 cup brown sugar OR 1 Tbs honey
    1 Tbs baking powder
    Mix all dry ingerdients together
    Add either two egg whites, or one whole egg
    1.5 cups non-fat milk
    1 Tbs olive oil (preferrably light)

Tips

~ Use whey instead of non fat milk. (I strain my yogurt to make my own version of Greek yogurt and use the whey that emerges instead of milk. Adds a different "twang" to the muffins.
~ Use two egg whites instead of one whole egg if you wish.
~ Use a handful of chocolate chips, or dried plums instead of raisins.
~ Use 1/4 cup brown sugar instead of honey if you wish.


Directions

Preheat oven 425.
Prep recipe mixing all dry ingredients together well. Then add moist ingredients. Add dried fruit. Mix all togehter.
Spoon into muffin tins
Bake for 15-18 minutes until golden crusty
Serve warm - tasty! Will keep for several days.
