Ingredients
-
4 chicken breasts (no bone or skin), bite size pieces
2 - 24 ounce cans of crushed tomatoes
1 - 15 ounce of tomato sauce
2 - 15 ounce cans of pinto beans
2 - 15 ounce cans of dark red kidney beans
1 - 15 ounce can of sweet corn
2 tsp red chili flakes (or less to taste)
4 tbsp chili powder (or less to taste)
2 tsp minced garlic (or less to taste)
Tips
You can make your own crushed tomatoes and sauce for a better flavor. For easy prep canned will do because the chili powder and peppers are strong flavors. Another fun addition is to render some salt pork and add the drippings and then dice the pork into bits and add them for great taste and texture.
Directions
Brown the chicken breasts in a skillet, then bake for 30 minutes at 350 in the oven. Cut the breasts into bite size pieces. While the chicken is cooking, combine the crushed tomatoes, tomato sauce, chili powder, chili peppers, beans, and corn in a slow cooker. The cooker can either be set to low or high depending on how quickly you want to be able to eat. When the chicken is ready add it to the slow cooker.
