Ingredients

    1 Med Onion chopped
    1 Lb. Italian turkey sausage
    32 oz chicken broth
    32 oz stewed tomato
    1 bay leaf
    2 garlic cloves minced
    2 cups Baby Kale chopped
    ! Tbls. Italian seasoning
    1 large sweet potato peeled and cube
    1/2 cup crumbled turkey bacon
    1 cup coconut milk
    salt and Pepper to taste

Tips

cut bacon with scissors into small pieces then cook till crispy


Directions

cook sausage in stock pot, drain if necessary,set aside. Saute onion in same pot till soft, add garlic saute about 2 more min. add sausage, stewed tomatoes, chicken broth, sweet potato, bay leaf, bacon. Cook on med heat till potatoes are soft - about 20 min.
Add chopped kale and coconut milk salt and pepper to taste. simmer another 30 min.
