Tasty & Healthy mix of fresh vegetables including Zucchini, Squash, Tomatos, Mushrooms & Onions. Tastes so good that even my 13-year old daughter loves it! Ingredients

    3c Zucchini sliced
    3c Summer squash sliced
    3c Mushrooms sliced
    1c Onions chopped
    4 Cloves of garlic chopped
    2c Canned Tomatos (no joice)
    1 tsp salt
    1 tsp pepper
    Non-fat, no calorie cooking spray
    (I use Kroger brand)

Directions

Coat wok (or pan) generously with cooking spray on med-low heat and add zucchini and squash. Cover, stirring often for 5-10 min. Add garlic, onions, salt and pepper. Cover stirring often for about 5 minutes. Add mushrooms and tomatoes. Cook until the firmness of vegetables is to your liking (I like my squash and zucchini firm). Sprinkle with grated parmesean.
