Introduction

Ingredients

    Lb of mild Italian sausage, removed from casing
    Half a medium onion, diced
    Package of sliced mushrooms
    Small can of sliced black olives
    Sargento provalone cheese, sliced
    Small can of tomato sauce
    5 large eggs, beaten
    Artichoke hearts, to taste, quartered

Tips

Feel free to add or remove "toppings" as you like. Low carb and low sugar.


Directions

Sauté sausage, mushrooms and onion ( diced), until water has mostly evaporated. Layer on artichoke and olives then add eggs, well beaten. Let cook on low until eggs have set, then pour on tomato sauce and layer on cheese slices. Place under broiler for a few minutes to brown cheese. Slice and serve.
