Ingredients

    3 C frozen broccoli, thawed, drained and chopped
    1 egg, lightly beaten
    1 T 1% milk
    2 T low-fat sour cream
    2 T flour
    2 scallions, chopped
    1 T real bacon bits

Tips

Make sure to blot broccoli to rid it of excess liquid. Zucchini, cabbage, cauliflower, or spinach would all work in the recipe, use about 3 cups of vegetable. Also, be sure to add the calories for the cooking fat you used to cook these in! I like to use olive oil, but butter or coconut oil would work just as well.


Directions

Mix all ingredients. Heat skillet and drop batter in what ever fat you choose to cook these in (though, a really good non stick surface will greatly reduce the amount of oil or butter needed). Cook on medium heat just as you would a pancake.
