Introduction

I miss mashed potatoes, I really do but, when I found out I could make a really decent and yummy alternative, I jumped all over it! This will be your new go-to comfort food with chicken, Thanksgiving, etc. I miss mashed potatoes, I really do but, when I found out I could make a really decent and yummy alternative, I jumped all over it! Ingredients

    1 head of cauliflower, leaves removed, steamed until soft
    1/4 c heavy cream
    1/4 block of Kerrygold Butter
    Dry basil
    Black pepper
    2-3 large garlic cloves diced

Directions

Steam whole head of cauliflower until very soft
Place in blender or food processor along with other ingredients and puree until creamy and consistency of mashed potatoes.

For an extra yummy step, sprinkle with cheese and bacont bits and allow to bake in a hot over. Delish!

Serving Size: makes approx 8 servings (less if you love it like I do)
