Ingredients

1 red onion, diced
4 oz baby bella mushrooms, sliced
1 tbsp. coconut oil
1/4 teaspoon salt
1/8 teaspoon pepper
2 (10 oz) packages of frozen chopped spinach, thawed
1 (16 oz) 1% cottage cheese
3/4 cup grated parmesan
1 cup shredded cheddar
1 (4 oz) jar diced Pimientos, drained
3 eggs, lightly beaten
Directions
1. Heat oven to 375
2. saute the onion and the mushrooms in the coconut oil until softened, add the salt and pepper
3. Squeeze all the water out of the spincach.
4.Combine all ingredients in the large bowl and stir to mix
5. Put in a 9x13 casserole and bake for 35 minutes.
