Ingredients

    1 cup green lentils (soaked overnight or brought to a boil and then left covered for 1 hour before rinsing)
    2 slices of turkey bacon cut in tiny pieces and fried in pot with 2 tbsp of olive oil
    1 carton (900 ml) vegetable stock
    1 yellow onion minced
    1 celery stock sliced
    1 garlic clove minced
    1 carrot sliced
    1 medium white potato diced
    2 handfuls of kale
    tandoori spice to taste (2 tsp)
    tumeric (1/2 tsp
    sage 1/8 tsp
    thyme 1/8 tsp


Directions

Soak lentils overnight
add oil to large pot and fry bacon and then onion and garlic, add rest of ingredients and cover pot. Simmer for 2 hours

Serving Size: makes 8-1 cup servings
