Number of Servings: 9

Ingredients

    Chicken 2-3 lb
    Rice 2.5 Cup uncooked
    Pigeon Peas (or favorite bean)
    Coconut Milk 1 Can
    Scallions 3-4
    Onion 1 Large
    Garlic 3 cloves
    Rosemary sprig
    Casareep or browning sauce 1Tbsp
    6 cups water

Tips

Even better the next day.
I like to make a pot and freeze individual servings the next day in wax paper covered in saran wrap.


Directions

Cut Chicken into 1inch cubes fry in 1 Tbsp Coconut oil or butter until brown. Remove from pan add scallions, onion, garlic, cook a few minutes. Add coconut milk, chicken, casareep, rosemary cook a few minutes until almost boiling. Add 6 Cups water, uncooked rice, pigeon peas, Pepper,cook uncovered 30 minutes or until rice is done but still a bit soupy. Remove pepper.
Eat or chill, better the next day!
