Ingredients

3.5 cups sliced roasted almonds
3.5 cups unsweetened shredded coconut
1.5 cups chia seeds
1/2 cup ground flaxseed
2/3 cup benefibre
10 oz honey (about 5/6 of a cup)
14 oz agave syrup (1 + 1/6 cup)
1 tbsp vanilla extract
1/2 tsp salt
Directions
Stir together first 5 ingredients in large mixing bowl and set aside.
Mix last four ingredients in a pot using a heat resistant spatula and heat to about 125 degrees celsius/260 degrees fahrenheit (use a candy thermometer!), stirring frequently.
Quickly pour hot liquid over dry ingredients and stir thoroughly until everything is coated.
Pour into a parchment-paper lined 9x13 pan and use a greased drinking glass bottom to compact and spread out the mixture evenly.
Allow to cool for 45 minutes to an hour and cut into 26 equal bars. Can be stored in fridge for up to 2 weeks or freezer for up to a year.
