Ingredients

4 whole medium green or yellow zucchini (it should equal about 8 cups once sliced)
1 large roughly chopped onion
5 oz (1 cup) grape or cherry tomato cut in halves
3 cloves of garlic chopped
Juice from 1 whole large lemon or from 2 small lemon
4 tablespoons of cilantro chopped
2 tablespoons of avocado oil (or other healthy oil)
spices to taste:
cayenne (optional)
black pepper
salt
Tips
I like my zucchini to be more on the crunchy side, but if you like it less crunch, let it cook about 2 minutes before tossing in the tomatoes. Then let it stand a few minutes on the stove (with the burner off) before you serve it.
Directions
Chop all the veggies and garlic. Set the chopped red onions, tomatoes and cilantro to the side.
In a bowl, toss the zucchini in 1 tablespoon of the avocado oil, and some of the lemon juice with all of the spices.
Heat the pan and add the remainder of the avocado oil. Once it starts to get hot, start sauteing the garlic and white onions. After about a minute, toss in the zucchini and some more spices if you'd like and let that saute for about another minute.
Now add in the tomatoes, red onions, cilantro and any additional lemon juice. Remove from heat and serve.
It should take about 5 minutes total depending on how crunchy or soft you want it.
