Introduction
I pieced this together from a few different recipes and created my own pie. I love Shepherd's pie and now that we are trying to eat healthier, I wanted a healthier version. It did not disappoint! Ingredients

Mashed potatoes - 4 cups
Red Quinoa - 3 cups
Mixed Vegetables (frozen) - about 8 - 10 oz
Brown Gravy Mix - 1 packet prepared
Nutritional yeast - 2 tbsp.
Almond Milk - 4 oz
Tips
This is a one pot type of meal. The protein comes from the quinoa, you've got your veggies and your carbohydrates. Using a vegan type gravy would make this dish completely vegan, also.
Directions
Prepare mashed potatoes. Boil potatoes, rinse then add Almond milk, nutritional yeast and other seasonings and blend until creamy.
Cook Quinoa, add to large bowl with mixed vegetables and prepared brown gravy. Mix well.
Place Quinoa mixture in casserole dish, then spread potatoes over the mixture.
Place in Oven on 350 for approx. 30 minutes or until potatoes begin to brown.
Serving Size: Makes approx. 8 - 1 cup servings
