Number of Servings: 8

Ingredients

    Olive Oil, 3 tbsp
    Onions, raw, 7 cup, sliced
    1 1/4 cups of brown lentils
    1 1/4 cups of rice

Directions

Cook onions for 15 minutes covered on med-low heat in olive oil till soft. Turn heat up to med-high and cook for an additional 25 minutes till browned.

While onions are cooking add 1 1/4 cups of lentils to 4 cups of boiling water water. Boil for 20 minutes. Add rice and 1/2 cup of onions to lentils turn to low, cover and cook for 25 minutes.

Spoon in shallow dish and cover with remaining onions.

    I wasn't clear on whether the rice was cooked rice or dry rice. I figured since the lentils needed to be cooked, the 1 1/4 cup rice was probably dry, not cooked. Well, I did that and the ratio was right. Tasty recipe. - 8/12/09
