Ingredients

    Use large head of cauliflower. Chop 6 large hard-boiled eggs, dice 2 stalks of celery. I choose to add chopped onion, rather than the onion powder called for in the original recipe.

    Mix the mayonnaise with the mustard, salt and pepper for the dressing. Add 1/8 tsp garlic powder to dressing if desired.

Directions

Chop cauliflower into small pieces. Cook in boiling water for about 5 minutes, just until tender. Drain and immerse in an ice water bath to stop cooking.

Drain cauliflower well and pat dry between several layers of paper towels. Place in bowl with remaining ingredients and fold together. Add the dressing and fold until fully blended.

Garnish with paprika and fresh parsley, chopped. Chill at least one hour before serving.
