Introduction

Ingredients

    1/4 cup unsweetened Almond Silk
    8 oz Fage non-fat plain greek yogurt
    1 medium very ripe or over ripe banana
    2 large eggs
    1/2 tsp salt
    1 tsp apple pie spice (cinnamon with a pinch of cloves and nutmeg)
    3/4 cup whole wheat flour
    1/2 cup ground flax seeds
    1/2 cup wheat bran
    1 tsp baking powder
    2 cups fresh blueberries

Tips

At first you can mix the wet and dry ingredients with a whisk, but soon the mixture will become very thick and you will need a spatula or wooden spoon.


Directions

Preheat oven to 350F. Put silk, eggs, banana, yogurt, spice, salt in blender and blend until smooth. Put all dry ingredients in large bowl and blend with whisk. Whisk in liquid until it starts to thicken. Using a spatula, blend in blueberries. Spray 6 cup large muffin pan with non-stick spray or use liners. Scoop into muffin pan and bake 30 minutes. Let cool, then remove from pan. Freezes well.

Serving Size: Makes 6 large muffins
