Ingredients

    3-4 cups cubed cooked chicken (I use 3 Trader Joe's chicken breasts)
    1 large fennel bulb, diced
    1/2 cup roasted cashews, unsalted
    1/2 cup dried cranberries
    2 tbls light mayo
    1 tsp dried sage
    2 tbls fresh parsley, minced
    salt and pepper to taste

Tips

I moisten the salad a bit with a tablespoon of frozen orange juice concentrate. It added a bit of zest to the flavor, as well!


Directions

Simply mix all materials in a bowl. Spoon onto romaine lettuce leaves to serve.
